Thai Yellow Curry is very easy to make, using brown rice or basmati, as well as tofu, vegetables, and sauce. By the way, green beans, corn and cauliflower can be used frozen. This dish was inspired by the popular My Muscle Chef Thai Yellow Curry with Tofu & Brown Rice

Ingredients

  • 100g Sweet potato
  • 70g Cauliflower
  • 70g Corn
  • 50g Brown rice
  • 150g Tofu
  • 100ml Coconut milk
  • 1 Onion
  • 2 Cloves of garlic
  • 10g Coconut oil
  • 70g Green beans
  • 1tsp Curry powder
  • 1/3 tsp Smoked paprika
  • 100ml of Water

Immediately cook brown rice in salted water. Peel the sweet potato and cut into cubes. Disassemble the cauliflower into inflorescences. Cut the green beans and corn into pieces. Also peel the onion and garlic, chop finely.

Melt the coconut oil in a frying pan and fry the onion and garlic over low heat for 4 minutes, then add the curry powder and stir with a spatula.

Pour in coconut milk and water (100 ml), stir. Place the green beans, sweet potatoes, cauliflower, and corn in the skillet. Stir and cook everything together for another 10 minutes on low heat.

Cut the tofu into cubes and place in the skillet. Stir and cook everything together for another 5 minutes. Add water if necessary.

Top with a serving of rice and top with vegetables with tofu and aromatic curry sauce. Garnish everything with finely chopped fresh parsley or other herbs. The dish is ready and ready to serve!
