Ingredients
- 1-1.5 kg potatoes (suitable for baking)
- 1-2 Tbs olive oil
- Salt
- Leftover beef chilli
- Additional optional toppings: sour cream, cheese, bacon (all included in shopping list)

Preheat the oven to 200 degrees celsius. Line tray with baking paper

Clean potatoes and dry well with paper towel or a clean tea towel- DO NOT peel

Use a fork to lightly poke holes in each potato 5 or 6 times

Place the potatoes on the tray and rub the skin all over (or use a pastry brush) with a light covering of olive oil then sprinkle with salt

Cook potatoes in the middle rack of the oven for 40-60 mins. The cooking time will depend on the size of the potato. The skin should be pretty crispy and you should be able to easily pierce the potatoes with a skewer or a knife. If in doubt leave them in another 5-10 mins

Carefully slice the potatoes from end to end, making sure that you don't cut all the way down to the bottom. You can use a fork to gently fluff up the insides a bit if you wish
