We are going to take a look at how to make low-carb fried rice by using Cauliflower rice! With only 10 g of carbs per serving of fried rice, you really can't beat the macros on this. I never liked the idea of Cauliflower rice but this stuff actually tastes pretty close to a good fried rice dish!

Ingredients

  • 450g Cauliflower
  • 2 Cups of Chopped Yellow Bell Peppers
  • 1 Cup of Chopped Carrots
  • 2 Cups of Chopped Green Onion
  • 2 Cups of Chopped Red Bell Peppers
  • 85g Shrimp Cocktail
  • 1 Tablespoon Chopped Garlic
  • 4 Large Eggs
  • 1 Tablespoon Soy Sauce
  • 1 Tablespoon Fish Sauce
  • Salt & Pepper to Taste
  • 3 Tablespoons Olive Oil
  • 230g Raw Shrimps without Shield
  • 1 Cup Whole Head of Garlic
  • 1 Tablespoon Curry Powder
  • 1 Tablespoon Garlic Powder
  • 1 Tablespoon Corn Starch
  • 1 Tablespoon Jalapeño

Directions

Grind 450g of cauliflower in a blender or grate with a cheese grater.

Place the cauliflower in a bowl and put it in a fridge.

Place 230g raw shrimps without the shield in a plate, add 1 Tablespoon corn starch, salt&pepper to taste, and mixed all together.

Put one 1 Tablespoon of olive oil in a middle heat pan, Cook 230g raw shrimps without a shield with 1 cup whole head of garlic.

In one pan put 1 Tablespoon olive oil, cook the 85g of Shrimp Cocktail with 1 Tablespoon chopped garlic.

In the same pan add 2 large eggs and scramble with the shrimps.

In a mortar add 1 Tablespoon of chopped red bell peppers, 1 Tablespoon of chopped yellow bell peppers, 1 Tablespoon Jalapeño, 1 tablespoon of minced garlic,1 tablespoon of curry powder, 1 tablespoon of fish sauce, grind it up for 2 minutes.

In one pan on high heat, add 1 Tablespoon olive oil and put the mixed prepared at the step before.

Add the Shrimp Cocktail into the same tan, fry everything up for 2 minutes.

Sauté in the same pan 1 cup of chopped carrots, 1 cup of chopped yellow bell peppers, 1 cup of chopped carrots, 1 cup of chopped green onion, 1 cup of chopped red bell peppers with the ground cauliflower, mixed all together.

Plate your food with half of the cauliflower rice, half of the shrimp, and place half an egg at the top.
