We take a look at a really easy Japchae recipe that takes no more than 15 minutes to make. We also go over how we can make this simple Korean dish into a high protein meal with a good balance of macronutrients. Ingredients

  • 150g of Glass Noodles
  • 226g Chicken Breast Sliced
  • 1 Cup of Onions
  • 1 Cup Shiitake Mushrooms
  • 1 Cup Wood Ear Mushrooms
  • 1 Cup Oyster Mushrooms
  • 1/3 Cup of Diced Carrots
  • 1 Cup of Baby Spinach
  • 1 Tablespoon of Spring Onion
  • 1 Tablespoon of Minced Garlic
  • 4 Tablespoons of Soy Sauce
  • 1 Tablespoon Sesame Oil
  • 2 Tablespoons Fruit Sweetener
  • 1 Tablespoon Sesame Seeds
  • Salt&Pepper to Taste
  • 3 Eggs

Directions

Soak 150g of glass noodles in warm water for 1 hour.

Cut into strips 1 cup shiitake mushrooms,1 cup wood ear mushrooms, and 1 cup oyster mushrooms.

Create the marinade by combining 4 tablespoons of soy sauce, 2 tablespoons of fruit sweetener,1 tablespoon of chopped garlic, 2 tablespoons chopped green onions, 1 tablespoon sesame oil, and 1 teaspoon of sesame seeds. The order does not matter.

In a pan add 1 tablespoon of oil and let it heat on medium-high. Add 1 cup of onions,1/3 cup of diced carrots, 1 cup shiitake mushrooms 1 cup wood ear mushrooms, 1 cup oyster mushrooms, 1 cup of baby spinach, and 1 tablespoon of salt. Cook it for 5 minutes on medium-high heat or until the onion gets ready.

Remove the previously prepared mixture and place it on a plate.

In the same pan add 1 tablespoon of oil, 226g chicken breast sliced, 1 teaspoon of soy sauce, and salt & pepper to taste. Cook it for 5 to 8 minutes on medium-high. After the chicken is fully cooked, take it out of the pan.

In the same pan add water and leave it to boil, add 150g of glass noodles, and cook it for no more than 5 minutes.

Take the noodles out and place them in a dry bowl and add 1 tablespoon of sesame oil.

In the same bowl add the chicken and the veggies previously cooked at the steps before, add 4 to 5 tablespoons of the marinade, and mix it all.

Plate your food with brown rice(the quantity will depend on what you want), add half an egg at the top, and add more chicken(optional) if you want to add more protein to your dish.
