Ingredients

  • 4 chicken breast cut into medium cubes (10 cubes per chicken breast, 4-5 cubes per skewer, total 8 skewers)
  • 4 garlic cloves minced
  • 1 tbsp Paprika
  • 1 tbsp dried Parsley
  • 1 tsp Turmeric
  • 1 tsp Salt & Pepper
  • 1 Lemon Juiced
  • 50-80g fat free or low fat Yogurt (Brand: Milbona)
  • Olive Oil for cooking
  • Mix & marinate then place into skewers
  • Mint Sauce:
  • 200g fat free Yogurt (Brand: Milbona)
  • A good handful fresh Mint or dried Mint
  • 4 Garlic cloves
  • 1/2 tsp Salt & Pepper
  • 1/4 Lemond Juice
  • Blend till smooth
  • Golden Rice:
  • 208g Uncooked Basmati Rice
  • 1/2 chopped Onion and Bell Pepper
  • 1 tsp Turmeric, Cumin, Paprika, Salt
  • 416ml Water
  • Bring to a light bubble then lower the heat and cover for 8 mins till fully cooked
