Ingredients
- 4 chicken breast cut into medium cubes (10 cubes per chicken breast, 4-5 cubes per skewer, total 8 skewers)
- 4 garlic cloves minced
- 1 tbsp Paprika
- 1 tbsp dried Parsley
- 1 tsp Turmeric
- 1 tsp Salt & Pepper
- 1 Lemon Juiced
- 50-80g fat free or low fat Yogurt (Brand: Milbona)
- Olive Oil for cooking
- Mix & marinate then place into skewers
- Mint Sauce:
- 200g fat free Yogurt (Brand: Milbona)
- A good handful fresh Mint or dried Mint
- 4 Garlic cloves
- 1/2 tsp Salt & Pepper
- 1/4 Lemond Juice
- Blend till smooth
- Golden Rice:
- 208g Uncooked Basmati Rice
- 1/2 chopped Onion and Bell Pepper
- 1 tsp Turmeric, Cumin, Paprika, Salt
- 416ml Water
- Bring to a light bubble then lower the heat and cover for 8 mins till fully cooked
