Lemon Tuna Pasta Salad

VIEW THE RECIPE

For the Pasta Salad – 340g spiral pasta  – 400g canned tuna (in water) – 1/2 cup diced red onions – 1 container cherry tomatoes, halved – 1 diced cucumber – 1 diced red capsicum – 1/2 container of roasted capsicum (in      oil) – rocket leaf salad For the Vinaigrette – 3 tablespoons freshly squeezed lemon      juice – 1/4 cup olive oil – 2 tablespoons plain yogurt – 1/2 teaspoon Dijon mustard – 1/4 teaspoon garlic powder – 1 teaspoon sea salt – 1/4 teaspoon ground black pepper

Ingredients

To make the vinaigrette, whisk together the vinaigrette ingredients until well-combined.

Cook Pasta

Cook the pasta according to package directions until al dente.

Chop, slice & dice

Chop all ingredients whilst waiting for pasta to cook.

Rinse Pasta

Once pasta is cooked, rinse in cold water. Add it to a large pot.

Add all veggies + Tuna

Combine all chopped veggies into bowl with pasta and tuna. Mix well. Add vinaigrette and combine.

Add some greens

Add some greens of your choice and mix again.

Serve
